Fudge Frosting


A quick post today for a quick but delicious frosting recipe. This is easy to make in a single saucepan, simple to whip up, and delectable enough for company - or just for yourself and a spoon!

I'm going to go ahead and warn you right now: this is evil frosting. It's made with lots of butter and sugar and chocolate, and it practically begs to be eaten right out of the pot. That's okay with me. That's VERY okay with me. But if it's not okay with you, you might want to check out a different post. A healthy post. Like tofu. Or soup.

Put one stick (1/2 cup) of butter into a saucepan over medium heat. Since the butter's going to eventually melt no matter what, I usually don't bother softening it first. Straight out of the fridge works just fine.


Now splash in six tablespoons of milk, also known as 3/8 cup if you want to get fancy with the fractions. I used nonfat milk because it tricked my brain into thinking I was making something healthy.That's a good trick, don't you think?


Here comes the chocolate! Five tablespoons of unsweetened cocoa powder. If you think five is a little more than you can handle, you could drop down to four.


Whisk everything together nicely, and let the mixture come to a boil, stirring often. It might start to separate, but that's okay, the sugar will bring it all together.


Once the mixture has boiled, remove it from the heat and add 1 teaspoon of vanilla extract or 1/4 teaspoon of vanilla powder. Never heard of vanilla powder before? Neither had I until a few weeks ago. It's pretty cool, but mostly I used it just because I'm all out of extract.


Finally, add four cups of powdered sugar, a little at a time, stirring well in between each addition.

Voila! Fudge frosting!

Pour it warm over cake and let it ooze down the sides. Spoon it over ice cream. Eat it with strawberries. Or you know, just grab a spoon and chow down. I won't tell.


Fudge Frosting

1 stick (1/2 c.) butter
6 T milk
5 T cocoa powder
1 tsp. vanilla extract
4 c. powdered sugar

In a saucepan, melt the butter over medium heat. Add milk and cocoa powder and stir until smooth. Cook until boiling, stirring often. When the mixture boils, remove from heat and add vanilla. Add powdered sugar a little at a time, stirring between additions.

If not using immediately, you may need to warm the frosting a little and add a bit more milk to create the right consistency.
